Caramelized Onion Torte

  • 3 large onions, sliced into thin rings
  • 3 tbsp fresh thyme, chopped
  • 1 tsp garlic powder
  • 2 tsp olive oil
  • 1/2 c crumbled goat cheese
  • 1 ½ c chopped pancetta
  • 1 lb store bought pizza dough
  • Cooking spray
  • Salt and pepper, to taste

 Directions: Preheat the oven to 375 degrees, and set a skillet on the stovetop to medium heat. Add the olive oil, onions, garlic, thyme, salt and pepper to taste. Sweat the onions until they are caramelized and golden brown, not burnt or seared. Set aside. On the countertop, using a little flour, roll out the pizza dough to about ¼ of an inch, and place it onto a 16 inch pizza pan that has been greased. Add the onions to the pizza dough and spread evenly. Sprinkle the goat cheese over the top of the onions, then add the pancetta, top with a little salt and pepper. Bake in the oven for 15-20 minutes, until the pizza dough is golden brown and crisp on the edges. Let the torte cool slightly, and cut into squares or slices, like a pizza. Enjoy!
